Blueberry Glazed Donut Muffins

I was looking for something to make for breakfast when I came across this recipe and wanted to try it out.

For the ingredients list, I wished they’d been a little more specific when it came to the butter, brown sugar and milk but in case you want to know, I used unsalted butter, light brown sugar and whole milk.

The directions only specify dipping the muffins once into the glaze but I think it’s worth the extra time to wait for the glaze to set after dipping it once and then dipping it again. This shows the difference between dipping it once (on the left) and dipping it twice (on the right):

Also make sure that if you’re going to apply sprinkles that you put them on before moving onto the next muffin. By the time I was done doing the second glaze on all the muffins, quite a few of them had already firmed up too much for the sprinkles to stick.

The muffin itself really didn’t have much flavor at all to me but the glaze… oh that blueberry glaze was delicious ! It was tart but with enough sweetness to make you feel like you were having a sweet treat for breakfast, a snack, or whatever time of day you feel like munching on one of these. Little bit of advice though? Make sure you’ve got a plate or something underneath your muffin when you eat it ’cause once that glaze sets, it has bits of it that flake off when you bite into it and they go everywhere !
